Oolong tea is one of the most complex teas to produce because the edges are bruised and the leaves are only partially oxidized. Before oxidizing the leaves are sun-dried, then crushed and heated at a high temperature.
Oolong tea has a naturally soft and sweet taste and is in taste between green and black tea. Oolong tea leaves are divided into tieguanyin (note the wonderful unfolding of the blade during the infusion) and Wuyi Rock Teas. Make your personal choose here.
